For 4 servings you will need: half a kilogram of carrots, peeled and cut into small pieces, 1 finely chopped onion, 1 diced potato, one and a half liters of water or vegetable broth, 1 tablespoon of olive oil, a large bunch of cilantro and salt. Heat the olive oil in a large saucepan, put the onion in it and fry it until golden brown. Now add potatoes and cilantro to the onion. After another 5 minutes, put the carrots and fill everything with broth. When the soup comes to a boil, lower the heat, cover and simmer for about 20 minutes until the carrots are soft. Now grind the soup with a blender into a puree and salt. Ready!
Before the beginning of the cultivation of potatoes in Russia, it was replaced by turnips. By the way, a worthy replacement, because there are only 30 kcal in 100 grams of turnips versus 80 kcal in 100 grams of potatoes. Just right for a slimming soup. Parsnips (47 kcal per 100 grams) do not appear too often in our diet, but in vain. It stimulates metabolism and promotes the removal of stones and salts from the body. Parsnip root is used in the soup, which can either be grated on a coarse grater or cut into arbitrary pieces.
To prepare a diet soup with parsnips and celery (celery has only 12 kcal per 100 grams), you will need: 4 parsnips, 1 turnip, 1 onion, 1 carrot, 100 grams of broccoli, 1 bell pepper, 1 celery root, a bunch of dill, 1 tablespoon a spoonful of olive oil, 2 cloves of garlic, salt, 2 liters of vegetable broth or water, a little salt. Heat the oil in a saucepan, add the grated parsnips, celery and turnips, chopped bell peppers, garlic and salt. Cook, stirring, 15 minutes. Then add stock, grated carrots, broccoli, onion and dill. Bring to a boil and, reducing the heat, cook for another 5 minutes. Serve on the table, garnished with fresh herbs.
Parsley can be added to the soup both as a root (49 kcal per 100 grams) as the main ingredient, and as a herb (47 kcal per 100 grams) to sprinkle the finished soup. It surpasses many vegetables in the content of ascorbic acid. This is one of the few aromatic herbs that does not lose its qualities during prolonged heat treatment or deep freezing.
And here is the recipe for a cold dietary parsley soup:
Ingredients: 250 grams parsley root, 1 onion, 1 tablespoon lemon zest, three garlic cloves, 4 cups skim milk, 1 tablespoon olive oil and salt. To prepare a slimming soup based on this root crop take: 1 kilogram of radish, 150 grams of seaweed (kelp) without additives, 4 cloves of garlic, a large bunch of green onions, 2 tablespoons of sunflower oil, 100 grams of soy sauce, salt. Cut the radish into cubes and stew a little in water. Pour oil into a preheated pan, put half a bunch of onions and fry. Add the stewed radish and fry again, adding soy sauce.
