Organic cookies: choose the right ingredients

As for butter and eggs, they are not essential in cake recipes. For example, the eggs can be replaced with flax or chia seeds, okara or a banana. The chia seeds that we suggest you use for this recipe are therefore sources of omega 3, fiber and calcium.


A high fiber cookie recipe to avoid blood sugar spikes

On the flour side, we prefer a wholemeal flour. Unlike white or refined flour (type 45 or 55), the germ of the cereal which contains a large part of the vitamins and minerals, phytosterols and lutein, nor the bark which is a source of fiber, has not been removed. . Soft, healthy and organic cookies recipe:

Here is the soft cookie recipe that Sarah Marin-mayor offers us.


  • 250g ripe bananas
  • 90g dark chocolate (min 80% cocoa)
  • 170g wholemeal flour (or mixed oatmeal)
  • 15g of chia seeds (or one egg)
  • 37 ml of water
  • 1 tablespoon of baking powder or baking powder
  • 40g of walnuts
  • 60g of oilseed puree without added sugar (almond, hazelnut, peanut ...)
  • 1 pinch of salt

Instructions for tasty cookies:

  • Preheat your oven to 190 ° C.
  • In a small bowl, swell the chia seeds with the water.
  • In a salad bowl, mash the bananas.
  • Add the oilseed puree, wholemeal flour, baking powder, dark chocolate pieces, crushed walnuts, a pinch of salt and the swollen chia seeds.
  • Mix to form a homogeneous paste.
  • Cover your baking sheet with baking paper and place the dough on it with a tablespoon.
  • Cook for 15 minutes then let cool for 10 minutes.

When they are very cold, cookies can be stored in an airtight glass or metal box for about three days. But let's face it, they just might not last long!
